Fogaça Pudding
Pastelaria Alpina has been boasting its excellent French Pudding recipe for many years. In 2002, on the eve of preparing its offers for the Christmas product list, there was a need to place different products whose originality would draw the attention of customers. And that was how, while savoring a slice of Fogaça, the idea came up to create the Fogaça Pudding. Between getting all the ingredients right and displaying the result in their shop window, two weeks went by. Anyone who has ever tried it says that it feels like eating a fogaça, but with the velvety texture of a pudding.

Entry – Fogaça Snack
A salted fogaça French toast, stuffed with chicken and capers and "Valpedro" cheese, half cured, with garlic and parsley au gratin. This entry intends to reinvent the traditional snack with local products, as a way of enhancing regional products in a new context.
Main Course - Santa Maria Cod
Cod confit in olive oil flavoured at low temperature, under a bed of onion with vegetables and mill corn. Cod is one of the most appreciated fish in Portuguese gastronomy and, as such, a symbol of our region. It is cooked in a low temperature, resting on a bed of onions garnished with vegetables.
Dessert - Coríntia
Sweetbread from Santa Maria da Feira stuffed with egg and pine nut cream, accompanied with carrot and citrus puree. This sweetbread "pillar" was inspired by the Feira Castle.

Entry - Chicken soup with mint from our vegetable garden
The people of Feira traditionally raised poultry for their own consumption, and this substantial soup was very characteristic of their homes and often served as the main course, as it includes chicken meat; it was also often served as an entry and flavoured with mint, as our restaurant presents it!
Main Course - Pork Tenderloin with Bread, Beans and Kale
The same goes with our main course, which in many farmers' houses was made with products fully grown in their gardens and home cattle: homemade pork, white beans and kale. Our chef’s mastery will do the rest! The kale is also from our very own vegetable garden.
Dessert – Blueberry Ice-cream Feira Caladinhos
We use blueberries from the restaurant’s garden to make a creamy ice cream, accompanied by our city's traditional cookies.

Cod with Bread is one of the symbols of Restaurante 1715, largely due to its preparation, with different processes involving the choice of cod, its soaking, the selection of complementary ingredients, and the cooking. Cod loin, traditional corn bread, garlic cloves, onion, olive oil, a selection of spices, white wine and small potatoes are the ingredients of this Cod with Bread.
Dessert - Profiteroles à la 1715
Profiteroles are made with choux pasta, created in 1540 by an Italian chef - Pantarelli - at the request of Catarina de Médici, then Queen of France. Profiteroles are filled at Restaurant 1715 with whipped cream or ice cream and covered with semi-bitter chocolate.

The traditional sweet bread called Fogaça has been produced in the Land of Santa Maria for centuries. Fogaça, which depicts the Castle of Santa Maria da Feira, is the inspiration for the sweet/salty Muralhas. The castle, in all its splendor, is protected by its strong walls, a robustness which is transposed to this delicacy through the mixture of fogaça dough with meats and the cheese.
Its ingredients include fogaça dough, bacon, ham and cheese, shaped like a wall to protect everyone who wants to taste it.

Alheira balls are among the most popular snacks/entries on Incanto's menu. For Imaginarius, Incanto suggests Alheira Balls with a special Feira touch, using typical local cheese, accompanied by an apple puree with Port wine.
Main Course - Steak with Serra da Estrela Cheese and Châmoa Liqueur
Steak with cheese is another highlight from our menu. For this edition of Imaginarius, Incanto has reinvented its traditional Steak with Serra da Estrela Cheese, replacing Port wine and figs with Châmoa liqueur (typical of Santa Maria da Feira). Homemade fries and sautéed vegetables accompany this steak.
Dessert – Ruby Chocolate Mousse with Raspberry Coulis and Almond Sponge Cake

The creativity of IMAGINARIUS will be present not only in the artistic installations and performances by our guest artists, but also in the gastronomic diversity that the official
“Sabores Imaginarius 2021" restaurants have to offer to the festival's audience. Through takeaway or home delivery, these restaurants provide a more complete and differentiating experience, through their creative and innovative Imaginarius Menus, that complement the gastronomic offer of the catering establishments in the Historic Centre of Santa Maria da Feira.
Fogaçaria will host 9 establishments in the municipality of Santa Maria da Feira that sell certified PGI (Protected Geographical Indication) fogaça. Given the digital format and, regardless of whether these bakeries and pastry shops are open to the public, a platform will be made available allowing Official “Sabores Imaginarius 2021” Fogaça Makers to sell fogaças, by-products and creative variations, through takeaway or home delivery services.
For the 20th edition of IMAGINARIUS, we have developed a special beer commemorating the event, exclusively produced with Feira hops, which is meant to be yet another identity and
differentiating element of Imaginarius.
